Cherry Muffins

I can never resist buying a bag of cherries at the Hy-Vee, and I can only eat so many straight (well, quite a lot actually, but a finite amount), so I made these cherry-almond muffins from Vegan with a Vengeance. I love when cookbooks are as fun and well written as V w/a V. The muffins weren't bad either. I'll probably add more sugar next time, but then I'm a sugar addict.

I'm not a vegan ("yet," Veg would say), but I've been trying to eat fewer animal products. I was a vegetarian for about half of my twenties, after my then-boyfriend gave me a pamphlet on factory farming. Then I kind of fell away from it. I think I didn't last because I was operating on a principle of denial, taking the attitude that I was giving something up. This time I'm looking for enticing delicious foods that I can feel happy about.

I've never been a milk drinker, so I'm already totally down with the soy milk in cereal and such. Just recently I've gotten into soy yogurt, which is surprisingly good. But a product called "Better Than Cream Cheese" is, sadly, not. And so the experimentation continues...
